Virginia, Don’t Ban “Cross-Gender” Dress

A school district in Suffolk, Virginia is trying to ban “cross-gender” dress in order to protect students from bullying, and murders and suicides that are connected to it. This policy would ban students from wearing clothing that does not match their [assigned] gender, or that causes a “disruption” or “health or safety concern”.

Despite the fact that the policy is vague — what exactly is outside of a student’s gender? — it is also very problematic. Students who don’t identify as their biological sex would be forced to dress a certain way, making so many kids feel uncomfortable and prohibiting them from expressing themselves. This would violate the freedom of expression.

Forcing people to conform to make other students feel comfortable does not get to the root of the problem — prejudice — it will simply shove it under the rug. The way someone expresses their gender is never a disruption or a health or safety concern unless it is allowed to be.

Instead of violating these students’ freedom of expression, tell the Suffolk School District to enforce bullying policies that strongly protect gender expression and teach their students to accept people as they are!

People pay RIDICULOUS amounts of money for stocks and broths, especially if you’d like a stock that doesn’t have 2485746457462735959 mg of sodium in it. This is ridiculous, because stock (chicken, beef, veggie, or otherwise) is essentially things you were going to throw away anyway + water + time. Stop paying exorbitant sums for stock and make your own!

You need: all the veggie bits you were going to throw out anyway, water, an hour.

Put a empty gallon ziplock bag in your freezer. If you want, you can label it “for veggie stock”!

Every time you cook, discard your vegetable bits into your bag. Onion peels, garlic peels, carrot tops, carrot peels, celery tops, the insides of peppers… all the inedible bits. You can really use whatever you want, but if you want to kick it off with a conservative stock, go with garlic, onion, carrots, and celery. I made my first one with peppers, asparagus, broccoli, plus the big four, and it turned out just fine. I’m told you should avoid beets. DO NOT BUY VEGGIES TO GO IN YOUR STOCK! Some recipes tell you to do this, and that’s just plain wasteful. The whole point is that stock costs zero dollars to make. Just use the bits you were going to throw away.

So yeah, just throw all the “unusable” parts into your bag and toss it back into the freezer. Repeat until your gallon bag is full.

Time to make stock! Pour your veggies into the largest pot you have and add enough water to cover. Bring to a boil, then reduce to a simmer and cover. Simmer for an hour or so, stirring every once in awhile. Place a colander in your second-largest pot, and pour your veggies + stock in to strain. If you want to make sure you have absolutely no vegetable bits in, you can strain it through cheesecloth. I don’t care, so I just use a colander with small holes.

Once strained, let your veggies cool. Your stock will be MUCH darker than what you’re used to buying (and paying way too much $$ for!). If you want you can dilute it some before you freeze it, but I find it’s easier to freeze it as-is, and then, when using it for recipes use 1/2 stock and 1/2 water. That gives you the option to use it in more concentrated form if you want it!

I freeze mine in leftover glass jars from my old vegetarian roommate who survived on pasta and store-bought pasta sauce. Measure it out as you freeze and label your jars so you know how much to thaw out when you want to use it! Makes anywhere from 8-12 cups of stock. In addition to freezing it in jars, I like to freeze 2 ice cube trays’ worth (measure your ice cube trays… mine hold 1.5 tablespoons liquid). Once frozen, pop ‘em out and put them in a ziplock or another glass jar. This way if you want to add a small boost of flavor to a soup or sauce, you can just throw your cube into your hot liquid, and badabing!

I’m pretty sure stock keeps for eternity, but my last batch lasted seven months and was perfectly fine. To thaw, if you’re the planning ahead sort you can toss it in the fridge. I’m not, so I just take off the metal lid and stick a jar in the microwave on the “defrost” setting for 5-10 minutes, or until it’s thawed enough to pour out into a pot and heat.

Not only will your homemade stock be much more flavorful and less salty than store-bought, but it just cost you zero dollars (or the cost of 8 cups of water, which is like four pennies). Perfect!
